For rock songs and the like, usually the guitar riffs are the first thing that catch my attention.
For rap, it'll be the beat.
But once I listen to a song a few times, i can remember everything about it, the guitar solos, drums and all that goodness.

Both the beat and words.
The beat because I have the urge to tap my hands/fingers/feet/legs to the beat. The words because well, they help. In the case of Japanese songs or any other non-English ones, I memorize the sounds of the words. Which is quite easy. I can sing a bunch of Japanese songs, but I'll be darned if I know what I am saying without looking at the lyrics.
